Chai-spiced Cider Spritzer

Maple syrup adds sweetness to these cool, spiced apple spritzers.

INGREDIENTS

  • 1 whole star anise
  • 2 cinnamon sticks
  • 3 whole cloves
  • 10 cardamom pods
  • 1 piece (about 2 inches) fresh ginger, washed and thinly sliced, plus 8 paper-thin slices for garnish
  • 3/4 cup pure maple syrup
  • 1 quart apple cider
  • 1 to 2 cups seltzer

DIRECTIONS

  1. Bring spices, ginger, syrup, and 1/2 cup water to a boil in a small saucepan. Reduce heat to medium-low, and simmer 2 minutes. Let stand at room temperature 1 hour. Strain, and discard solids.

  2. Stir together spiced syrup and apple cider in a pitcher, and refrigerate until cold. Pour 1/2 cup spiced cider into each of eight glasses, and top with seltzer. Garnish each glass with ginger.
